McDonalds Sausage McMuffin Makeover

For breakfast, my ultimate go-to is a bowl of cereal and fruit. However, I decided to change it up a bit this week, and try something new. I had some leftover cheese slices I needed to use up, and at first thought about making omelets, but instead came up with the idea to make my own version of a healthier Sausage McMuffin from McDonalds.

Servings: 1

Ingredients:
2 HEB- Large Brown Eggs All Natural Cage Free
1 Thomas- Light Whole Grain English Muffin
1 Morning Star Breakfast- Original Sausage Patty
1 slice HEB Singles- 2% Reduced Fat American Cheese
Grounded black pepper

Directions:
Use a knife to cut your bread in half, and place each half face down on an oven rack. Turn your oven to 350, and let it toast for about 10 minutes. While waiting, turn your stove to high, spray a skillet with non-stick spray, and cook your sausage patty. When finished, place the patty aside to cool, and spray more non-stick spray. Crack your eggs in a bowl, whisk together with the black pepper, and then pour into the skillet. Use a spatula to form the eggs into a circle, as best you can, and flip occasionally. When done, place your cheese slice on top of the egg, turn your stove to low, and keep it on the heat for another minute or so. When your bread is ready, remove from the stove and place face open on a plate. Place your egg and cheese, cheese side up, on the bottom half of your bread, top with your sausage patty, and serve.

Although my version is a bit higher in sodium, primarily because of the sausage and cheese, as well as a bit higher in carbs, it's a much better choice as far as calories, fat, protein, and fiber go. Sometimes, you have to resort to on-the-go food, such as something from McDonalds. But, if you have the time, make your own versions at home! Not only do you have more nutritious choices, but you can customize your meal however you'd like, and you save a LOT of money! I'll definitely be making these again, and I'll be trying other versions of it as well.
