Greek Inspired Mini Pizza

It's the weekend, you don't feel like cooking, and you decide to order in pizza and watch TV. This scenario has played out for me before, and I know it's not uncommon for others. Instead, how about making your own pizza at home? Not only is it fun to make, but you can customize it, healthify it, and save money!

Servings: 1
(1 pizza= 452 calories, 38g carbs, 18g protein, 9g fiber)

Ingredients:
30g Hill Country Fare- California Ripe Olives- Chopped
1/2 cup baby spinach leaves
1 HEB- Whole Wheat Ultra Thin & Crispy Crust
44g Kraft- Feta Cheese Crumbles
2 tbsp HEB- Specialty Series- Basil Pesto
1 Roma tomato, sliced

Directions:
Preheat the oven according to directions on the crust package, and spray a cookie sheet with non-stick spray. Take your crust, and rub a small amount of water on it with your fingers. Measure out your pesto, and pour evenly. Next, lay out your spinach on top of the pesto. Using a cutting board, cut your tomato in slices, and then place on top of the spinach. Use a can opener for the olives, pour into a bowl, and rinse before adding to the pizza. Lastly, top with your feta cheese. Cook according to the directions, using less time for a softer crust, and more time for a crispier one. Let it cool at least 10 minutes before serving, and then dig in!
