White Flesh Peach Salad

I had dinner with my parents last night, and we had an amazing homemade salad! I love experimenting with salads, and came up with this one by throwing random ingredients together. One of the best things about summer? Peaches!

Servings: 1

Ingredients:
3 oz chicken breast
4 cups salad greens- Spring Mix
1 100 calorie pack- Emerald Natural Walnuts & Almonds
1 white flesh peach
2 tbsp Kraft Balsamic Vinaigrette
Lemon juice
Grounded black pepper

Directions:
Turn on the stove to high, 8-9, and spray a skillet with non-stick spray. Put as much pepper on the raw chicken as desired, cook until done, and then cut into bite size pieces. Using a cutting board, slice your peach into thin slices, and set aside. Place all of your greens in a bowl, and drizzle with as much lemon juice as desired. Toss in the chicken, walnuts, nuts, and peach, and then add your dressing. Toss, grab a fork, and serve!




My original plan was to get the 100 calorie cinnamon almonds, but unfortunately, they were sold out. :( The walnuts and nuts, however, were great additions! I loved this salad, and will definitely be making it again! Now...what about dessert?! I had a pretty low calorie day, so decided to enjoy a new, semi-healthy, higher calorie dessert I found at HEB. Yogurt covered papaya!


You can enjoy 5 big pieces for 200 calories, and it's delicious! Enjoy! :)
