Light Lunch

A couple weeks ago, I finally gave in and tried the Laughing Cow cheese wedges. My mom, sister, and one of my good friends kept telling me how good they were, and they were right! I love using the swiss flavor to put on celery, and decided to try the tomato basil flavor this week for my sandwich.

Servings: 1

Ingredients:
2 slices wheat bread
2 oz deli turkey
8 slices cucumber
1 Laughing Cow tomato basil wedge

Directions:
Take both slices of bread, and spread half of the wedge on each one. Top each side with half of the cucumbers, place the turkey slice in the middle, and form into a sandwich. Serve with a glass of water and a side of carrots, and you have the perfect light lunch.



With the ingredients and brands I used, the total meal came out to be about 250 calories (200 for the sandwich, 50 for the carrots). It was light, quick, and filled me up. It's perfect for summer, too, because it's filled with refreshing and chilled cucumber. :) Enjoy!
